Abstract
Asam Sitrat merupakan salah satu asam organik lemah yang banyak digunakan dalam industri kimia, khususnya pada industri makanan dan minuman. Pabrik asam sitrat dengan kapasitas 10.000 ton/tahun dirancang untuk memenuhi kebutuhan dalam negeri dan diharapkan mampu bersaing dengan pasar luar. Selain itu, pra rancangan pabrik ini bertujuan untuk memenuhi kebutuhan asam sitrat di Indonesia. Proses produksi asam sitrat ini terdiri dari tiga tahapan proses yaitu, tahap pretreatment bahan baku biji sorgum menjadi glukosa, fermentasi glukosa menjadi asam sitrat dengan bantuan jamur Aspergillus Niger, dan tahap pemurnian asam sitrat agar diperoleh produk dengan kemurnian yang tinggi. Pabrik ini rencananya akan didirikan di Gresik, Jawa Timur dengan luas tanah 38.398 m2. Pabrik asam sitrat ini memiliki jumlah pekerja sebanyak 133 pekerja dengan waktu operasi 24 jam selama setahun yang dibagi menjadi 3 shift dengan 8 jam kerja/shift. Pabrik asam sitrat ini membutuhkan listrik sebesar 1.515,31 kW dan kebutuhan air sebesar 167.010,64 kg/jam. Adapun modal tetap (FCI) dan modal kerja (WCI) yang dibutuhkan dalam pembangunan pabrik ini berturut-turut sebesar Rp.711.301.687.989 dan Rp. 125.523.827.281. Sehingga jumlah modal investasi (TCI) pabrik ini sebesar Rp. 836.825.515.281. Berdasarkan aspek ekonomi nilai IRR pabrik ini 9%. ROI sebelum pajak sebesar 23,01% dan setelah pajak sebesar 16,11%. POT selama 6,7 tahun, dan BEP sebesar 44,76% Dari aspek tersebut dapat disimpulkan bahwa pabrik asam sitrat ini layak didirikan. Kata kunci: Asam Sitrat, Fermentasi, Sorgum.
