Abstract

Cake Salak merupakan produk unggulan yang paling diminati oleh konsumen di IKM Salakilo. Namun, tantangan utama yang dihadapi adalah ketidaksesuaian antara volume produksi dan tingkat penjualan mingguan, yang mengakibatkan terjadinya kelebihan stok dan pemborosan karena umur simpan produk yang hanya mencapai tiga hari. Untuk mengatasi permasalahan tersebut, diperlukan metode peramalan yang tepat guna menyelaraskan jumlah produksi dengan permintaan pasar. Penelitian ini bertujuan untuk melakukan prediksi penjualan Cake Salak secara akurat menggunakan pendekatan deret waktu (time series), serta mengidentifikasi model peramalan terbaik yang dapat diimplementasikan oleh IKM Salakilo. Dua metode yang dianalisis dalam penelitian ini adalah Single Exponential Smoothing (SES) dan Autoregressive Integrated Moving Average (ARIMA), dengan tolok ukur akurasi berupa nilai Mean Absolute Percentage Error (MAPE). Hasil penelitian menunjukkan bahwa model ARIMA terbaik yang diperoleh adalah ARIMA(2,0,2) dengan nilai MAPE sebesar 2,30%, sementara metode SES dengan nilai alpha 0,1 menghasilkan MAPE sebesar 2,54%. Berdasarkan nilai akurasi tersebut, model ARIMA dinyatakan lebih unggul dalam memprediksi penjualan Cake Salak. Penerapan model ini diharapkan mampu membantu IKM Salakilo dalam perencanaan produksi yang lebih optimal, mengurangi kerugian akibat produk tidak terjual, serta meningkatkan efisiensi pengelolaan persediaan.
