Abstract
Cases of honey counterfeiting and adulteration are increasingly rampant, requiring an objective honey quality classification system. Previous research has developed honey datasets with optical rotation angle and color. The acidity of honey can also be used as a parameter for honey quality classification. This study aims to design a prototype that can measure the physical parameters of honey. Physical parameters include color, pH, and optical rotation angle. The prototype integrates a TCS3200 sensor for color analysis (RGB), a pH sensor for acidity, a polarimeter for optical rotation angle, an analyzer with an A4988 stepper motor, and an LDR sensor for optical rotation. The system is controlled by an Arduino Uno with graphic visualization in MATLAB. Testing on 10 types of honey (Kandu, Kopi, Kelulut, Klanceng Trigona, Kelengkeng, Rambutan, Kaliandra Flower, TJ, Rasa, Multiflora) with 5 concentration variations (20%, 40%, 60%, 80%, 100%) and 3 honey conditions (pure, water mixture, sugar mixture). The results showed significant parameters: optical rotation (47.25°-76.50° for good quality honey for concentration at 100% and Optical Rotation (76.50°- 180°) for mixed honey with concentration below 100%, pH (4-4.9 for good quality honey for concentration at 100%) and Ph (5-6 for mixed honey with concentration below 100%), color (RGB), resistance and light intensity.
