Abstract
Proses fermentasi tapai ketan pada tingkat Usaha Mikro, Kecil, dan Menengah (UMKM) umumnya masih dilakukan secara konvensional dengan mengandalkan suhu lingkungan yang tidak menentu. Kondisi ini menyebabkan suhu fermentasi sulit dipertahankan secara konsisten pada rentang optimal 35°C 40°C. Kenaikan suhu di luar rentang optimal berisiko menghambat aktivitas mikroorganisme dan menyebabkan kegagalan fermentasi. Penelitian ini merancang dan mengevaluasi kinerja sistem pengendalian suhu menggunakan metode Fuzzy Mamdani dengan menganalisis pengaruh variasi jumlah fungsi keanggotaan (2 MF dan 3 MF) serta batas domain (sempit, sedang, dan lebar) terhadap karakteristik respons sistem. Metodologi yang digunakan bersifat eksperimental dengan media uji berupa kotak styrofoam berukuran 47×32×27 cm dan lampu pijar sebagai sumber panas utama. Sistem dikembangkan dalam mode closed-loop menggunakan sensor DS18B20 dan mikrokontroler Arduino UNO, dengan variabel masukan berupa Error (e) dan Delta Error (Δe), serta variabel keluaran berupa tingkat daya pemanas. Kinerja sistem dievaluasi melalui parameter overshoot, rise time, settling time, dan steady-state Error. Hasil pengujian menunjukkan bahwa konfigurasi 3 MF domain sempit (Skenario 6) merupakan konfigurasi paling optimal dengan rise time 310 detik, overshoot 1,35%, settling time 240 detik, dan steady-state Error 1,25%. Hasil penelitian menunjukkan bahwa Baseline sedikit lebih unggul pada seluruh parameter dibandingkan skenario 6 Fuzzy Mamdani. Skenario Fuzzy Mamdani hanya unggul dari sisi stabilitas pada kondisi tunak. Hasil penelitian ini memberikan acuan dalam menentukan konfigurasi fuzzy controller yang paling optimal untuk mengendalikan suhu pada sistem kendali suhu fermentasi tapai ketan.
