Abstract
Pengeringan merupakan salah satu tahapan penting dalam pengolahan lada putih (Piper nigrum L.) untuk menurunkan kadar air sehingga mutu dan daya simpan produk dapat dipertahankan. Namun, proses pengeringan konvensional masih menghadapi kendala berupa ketergantungan terhadap kondisi cuaca serta kesulitan dalam menjaga suhu ruang pengering agar tetap stabil. Penelitian ini bertujuan mengembangkan sistem pengendalian suhu pada prototipe pengering lada dengan efek rumah kaca menggunakan metode Adaptive Neuro-Fuzzy Inference System (ANFIS) yang terintegrasi dengan Internet of Things (IoT), serta menganalisis kinerja sistem berdasarkan parameter performansi sistem kontrol. Metode penelitian meliputi perancangan perangkat keras dan perangkat lunak, pelatihan model ANFIS menggunakan MATLAB berdasarkan variabel eror dan delta eror, implementasi model pada mikrokontroler ESP32, integrasi sistem IoT menggunakan platform Blynk dan Google Sheets, serta pengujian kinerja sistem secara keseluruhan. Hasil penelitian menunjukkan bahwa sistem berhasil diimplementasikan dan mampu mengendalikan daya heater secara adaptif untuk menjaga suhu ruang pengering di sekitar setpoint 50°C. Berdasarkan hasil pengujian, sistem memiliki karakteristik respon berupa delay time 5 menit, rise time 5 menit, settling time 8 menit, maximum overshoot 0,49%, dan steady-state error 0,11%, yang menunjukkan respon cepat, stabil, dan akurat. Sistem IoT juga berhasil menampilkan parameter suhu, kelembapan, berat lada, dan status aktuator secara real-time, serta melakukan pencatatan data otomatis ke Google Sheets dengan rata-rata delay monitoring sebesar 1,093 detik dan delay kendali sebesar 2,958 detik. Pada pengujian keseluruhan, sistem menghasilkan durasi pengeringan selama 371,4 menit, laju pengeringan sebesar 0,075 g/menit, dan penyusutan berat lada sebesar 28%. Hasil tersebut menunjukkan bahwa integrasi ANFIS dan IoT mampu menghasilkan sistem pengering lada yang adaptif, stabil, dan mendukung proses monitoring secara real-time.
