Abstract

Perencanaan produksi dapat membantu industri manufaktur atau industri lainnya untuk menjalankan proses produksinya dalam mengoptimalkan produksinya guna memenuhi permintaan konsumen. Unit Pelaksana Teknik Daerah (UPTD) Sentra Industri Kecil Somber merupakan salah satu sektor industri tahu dan tempe yang berada di Balikpapan. Observasi pada pelaksanaan produksi tahu yang telah dilakukan di rumah produksi Bapak Rahim, diketahui bahwa kapasitas produksi tahu berbeda setiap bulannya karena belum memiliki perencanaan produksi tahu sehingga mengakibatkan rumah produksi Bapak Rahim mengalami kehilangan penjualan (lost sales) sebesar 816 kg dengan nilai sebesar Rp 20.400.000 pada tahun 2022. Tujuan dilakukan penelitian ini untuk merencanakan dan memberikan hasil kapasitas dan waktu produksi tahu yang sesuai untuk rumah produksi Bapak Rahim. Metode perencanaan produksi tahu menggunakan metode peramalan moving average, weight moving average, exponential smoothing dan linear trend line model. Hasil penelitian dalam perencanaan kapasitas dan waktu produksi tahu menggunakan peramalan metode moving average 3 periode dan 6 periode masing-masing sebesar 6081 kg/bulan dan 6025 kg/bulan, metode weight moving average 3 periode dan 2 periode masing-masing sebesar 5792 kg/bulan dan 5504 kg/bulan, metode exponential smoothing dengan alpha 0,80 0,90 dan 0,95 masing-masing sebesar 5258 kb/bulan, 5080 kg/bulan dan 4990 kg/bulan serta metode linear trend line model sebesar 6317 kg/bulan. Kesimpulan dari penelitian ini menggunakan metode peramalan yang paling sesuai adalah weight moving average dengan 2 periode pembobotan dengan total kebutuhan kapasitas waktu produksi tahu sebesar 1671,0144 jam/tahun dan total kapasitas waktu produksi tahu yang tersedia sebesar 1874,6112 jam/tahun, dikarenakan selisih pada permintaan aktual dengan peramalan yaitu sebesar 732 kg yang tidak melebihi nilai lost sales tahun 2022. Penelitian selanjutnya dapat dilakukan dengan mempertimbangkan aspek biaya terhadap inventory, waktu permintaan tahu lebih dari satu tahun.
