Abstract

Pendirian pabrik margarin bertujuan untuk untuk memenuhi kebutuhan margarin dalam negeri dan mengurangi tingkat impor margarin dari luar negeri dengan mempertimbangkan kebutuhan pasar yang makin meningkat, ketersediaan bahan baku yang cukup melimpah, dan belum adanya industri margarin di Kalimantan. Adapun proses produksi margarin dari crude palm oil (CPO) terdiri dari tiga tahap utama, yaitu tahap pre-treatment bahan baku, tahap sintesis, dan tahap pemurnian. Tahap pre-treatment dilakukan untuk menghilangkan pengotor dan komponen yang tidak diinginkan dalam minya, mulai dari proses degumming, lalu bleaching menggunakan adsorben bleaching earth, dan netralisasi untuk menghilangkan FFA (free faty acid) dalam CPO. Setelah minyak melalui proses refinery, selanjutnya adalah tahap sintesis NDBPO menjadi margarin dengan penambahan katalis enzim lipase dan minyak kelapa. Proses sintesis ini antara lain proses interesterifikasi enzimatik, lalu tahap pemurnian yaitu proses deodorisasi, emulsifikasi, dan kristalisasi untuk mendapatkan bentuk margarin sesuai dengan ketentuan, serta tahap terakhir yaitu pengemasan produk. Pabrik margarin ini direncanakan dibangun di Kecamatan Muara Kaman, Kalimantan Timur, dengan kapasitas produksi sebesar 40.000 ton/tahun. Pabrik margarin ini membutuhkan listrik sebesar 3996,54 kW dan kebutuhan air sebanyak 775.894 L/jam. Adapun modal tetap (FCI) adalah sebesar Rp 1.689.042.710.349, dan modal kerja adalah sebesar Rp 298.066.360.650. Sehingga jumlah modal investasi (TCI) pabrik margarin adalah sebesar Rp 1.987.109.070.999. Berdasarkan aspek ekonomi, nilai DCFR pabrik margarin yang akan dibangun adalah sebesar 20,54%, ROI sebesar 78,11%, dan BEP sebesar 13,02%. Dari berbagai aspek tersebut, dapat disimpulkan bahwa pabrik margarin ini layak dikaji lebih lanjut. Kata Kunci: Crude Palm Oil, Interesterifikasi Enzimatik, Margarin
