Abstract

Ayam Guling Enakko Balikpapan sebagai salah satu bisnis kuliner yang menghadirkan beragam pilihan macam nasi yaitu nasi kebuli, nasi kuning dan nasi putih. Penelitian ini bertujuan untuk mengetahui preferensi konsumen terhadap atribut yang berpengaruh dalam kesediaan membayar serta nilai Willingness To Pay (WTP) setiap atribut, sehingga dapat menerapkan atribut yang berpengaruh pada nasi kebuli untuk nasi kuning dan nasi putih dengan menggunakan pendekatan Discrete Choice Experiments (DCE) serta memberikan saran untuk peningkatan penjualan di Ayam Guling Enakko Balikpapan. Hasil analisis conditional logit menunjukkan bahwa prefrensi konsumen terhadap atribut nasi kebuli ada 6 atribut dan pengujian hipotesis bahwa nilai p < 0,05. Kesimpulan penelitian ini, atribut yang berpengaruh yaitu rasa pedas manis, kemasan box, promosi penjualan diskon, aroma rempah dan cara pembelian datang ke outlet, sedangkan hasil pengujian hipotesis terhadap kategori yang berpengaruh pada nasi kebuli adalah kemasan box memiliki nilai p = 0.000279 dan aroma harum nilai p = 0.010962 namun memiliki nilai koefisien negatif sehingga dapat menunjukkan bahwa aroma rempah lebih berpengaruh secara signifkan dibandingkan aroma harum.
