Abstract

Proses penyangraian merupakan tahapan krusial penentu kualitas akhir produk kopi, di mana kestabilan suhu menjadi faktor penentu utama. Mesin penyangrai kopi memiliki karakteristik sistem termal yang bersifat nonlinier, lambat, serta sangat dipengaruhi oleh variasi beban biji kopi. Penerapan kontroler konvensional dengan parameter tetap pada sistem ini sering kali menghasilkan performa yang kurang optimal, ditandai dengan respons suhu yang tidak stabil, lonjakan (overshoot) yang tinggi, serta waktu tunak (settling time) yang lama. Penelitian ini bertujuan merancang sistem pengendalian suhu pada mesin penyangrai kopi menggunakan kontroler GA-PID adaptif berbasis Logika Fuzzy. Pada tahap perancangan awal, pemodelan sistem dilakukan menggunakan metode Nonlinear AutoRegressive with eXogenous input (NLARX). Selanjutnya, Algoritma Genetika (GA) diterapkan secara offline untuk mengoptimasi parameter dasar kontroler PID berdasarkan model NLARX tersebut, menggunakan nilai ITAE sebagai fungsi kebugaran. Parameter optimal hasil GA dijadikan sebagai baseline. Pada tahap implementasi, Logika Fuzzy tipe Mamdani digunakan sebagai mekanisme adaptif untuk memberikan koreksi secara real-time berdasarkan nilai error dan delta error selama proses penyangraian berlangsung. Hasil pengujian menunjukkan sistem GA-PID Adaptif Fuzzy mampu bekerja sangat baik. Optimasi GA menghasilkan parameter dasar Kp =8.513, Ki=0.069, dan Kd=8.909. Pada pengujian tanpa beban, sistem menghasilkan overshoot sebesar 3,70% (setpoint 210∘C) dan 2,50% (setpoint 260∘C), dengan error steady-state (ESS) masing-masing 0,38% dan 0,26%. Pada pengujian dengan variasi beban 100 gram, 200 gram dan 300 gram biji kopi Robusta, sistem kendali tetap mampu mempertahankan kestabilan suhu dengan nilai ESS konsisten di bawah 1%. Hal ini membuktikan bahwa metode yang diusulkan memiliki kemampuan adaptasi sangat baik terhadap gangguan perubahan beban.
